Carole's Pizza
- 2 envelopes dry yeast (I use the fast-rising kind)
- 1 teaspoon sugar
- 1 1/3 c warm (hot if rapid-rise) water
- 1 teaspoon salt
- 4 cups flour
- corn meal
"Sprinkle sugar & yeast over hot water in large bowl. Let stand two
minutes. Add salt & 2 cups flour; beat smooth. Gradually work in 2 more cups
of flour. Knead dough on floured board 3-5 minutes. Place dough in greased bowl,
turning to grease all over. Cover. Let rise 1 hour (half-hour if using
Rapid-Rise yeast.) Cut in half. Nudge each half onto baking stone that has been
sprayed with baking spray and sprinkled with corn meal. Brush olive oil over
crust."
"While dough is rising, prepare pizza sauce."
Pizza Sauce
- "1 16 oz. can tomatoes, pureed."
- 6 oz. can tomato paste
- 1/2 c hot water
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/4 teaspoon pepper
- onion powder
- Mozzarella cheese
- "Desired toppings - pepperoni, mushrooms, sausage, etc."
Combine tomato paste with tomatoes and hot water. Add seasonings. Bring to
boil. Turn down heat and simmer.
"Heat oven to 450 degrees. Place pizza crusts in oven for ten minutes. Remove
from oven and top with sauce, mozzarella cheese and other toppings. Bake for
10-12 minutes longer until cheese browns."
