Easy Rice Quiche

  • 1 box Uncle Ben's Homestyle Chicken Rice
  • 1 3/4 cups water
  • 1 pie crust
  • 1/2 cup milk
  • 3 eggs
  • 1/2 c shredded Colby/Jack cheese

"Heat oven to 400 degrees. In large skillet, combine water, rice, and contents of seasoning packet. Bring to a boil. Cover, reduce heat and simmer 10 minutes. Spoon mixture into pie crust. In small bowl, combine milk and eggs; mix well. Pour over mixture in pie crust; top with cheese. Bake 30-35 minutes or until knife inserted in center comes out clean. Serves 6."
