Sausage Lasagna Roll-Ups
- "1/2 lb. Italian sausage, mild or hot"
- 3 cups tomato juice
- 1 6 oz. can tomato paste
- 1/4 t salt
- 1 t sugar
- Dash pepper
- 1/2 t oregano
- 8 oz. package lasagna noodles
- 1 16 oz. ricotta cheese
- "8 oz. mozzarella cheese, shredded"
- 1/2 c Parmesan cheese
- 1 egg
- 1/8 t pepper
- Dash nutmeg
- 1/4 t salt
"Crumble sausage and brown in 2 T oil in large skillet. Drain sausage and set aside.
In skillet, mix tomato paste with tomato juice, salt, sugar, oregano and pepper.
Add sausage to sauce and simmer. Meanwhile, prepare lasagna according to package
directions. In a medium bowl, mix ricotta and Parmesan cheese with egg and half
of mozzarella. Add seasonings to cheese mixture. Run cold water over cooked lasagna
noodles until cool. Pour a layer of sauce into greased 13x9-inch pan. Spread each
lasagna noodle with heaping T of cheese mixture. Roll up jelly-roll fashion and
place in sauce. Cover with remaining sauce and top with mozzarella cheese. Cover
pan with aluminum foil and bake at 375 degrees for 30 minutes. Remove foil and bake
an additional ten minutes until mozzarella browns and bubbles. Serves 4-6."
